Florentine pangasius fillets

Ingredients

  1. 1 L (4 cups) fresh baby spinach
  2. 4 pangasius fillets
  3. To taste, salt and pepper
  4. 1 onion, thinly sliced
  5. 2 carrots, grated
  6. 5 mL (1 tsp.) olive oil
  7. 125 mL (1/2 cup) grated light mozzarella cheese

Directions

  1. Preheat the oven to 200°C (400°F).
  2. Microwave or steam spinach for 1 minute, then distribute it evenly over the bottom of a baking dish.
  3. Place the pangasius fillets on top of the spinach and season to taste.
  4. Fry the onions and carrots in the oil for 2 or 3 minutes then spread them evenly over the fish fillets.
  5. Sprinkle cheese over top and bake for 12 to 15 minutes.
  6. Serve with steamed, julienned vegetables (carrots, peppers, and zucchini).
