Flaky Swiss Cheese

Ingredients

  1. 2 medium yellow onions, cut into thin strips
  2. 15 mL (1 tbsp.) butter
  3. 30 mL (2 tbsp.) balsamic vinegar
  4. 450 g (2 sheets) store-bought pastry dough, thawed
  5. 250 mL (1 cup) grated Swiss cheese
  6. 60 mL (1/4 cup) fresh cream
  7. 15 mL (1 tbsp.) finely chopped fresh thyme
  8. 10 mL (2 tsp.) Dijon mustard
  9. To taste salt and pepper

Directions

  1. Place oven rack in bottom position and preheat oven to 200°C (400°F).
  2. In a skillet set over medium-low heat, caramelize onions in butter for about 10 minutes.
  3. Deglaze adding balsamic vinegar and mix well. Reduce heat to low and cook for about 5 minutes. Set aside.
  4. On a work surface, cut each dough sheet into 4 equal squares and place on a parchment-lined baking sheet.
  5. In a bowl, combine Swiss cheese, fresh cream, thyme, and mustard. Spread cheese mixture in the middle of each square and top with onions. Take care to leave an edge of about 1.5 cm (0.6 in.) all around.
  6. Bake for about 20–25 minutes or until crust is golden.
  7. Sprinkle with thyme to taste and season well with salt and pepper. Squares can be cut into two triangles to make appetizer-style bites.
