Fingerling potatoes with cheese sauce

Ingredients

Garnish

  1. Finely chopped parsley , to taste

  1. 1 bag (680 g/1.5 lb.) yellow fingerling potatoes
  2. 10 mL (2 tsp.) butter
  3. 10 mL (2 tsp.) flour
  4. 125 mL (1/2 cup) 15% M.F. cooking cream
  5. 125 mL (1/2 cup) milk
  6. 125 mL (1/2 cup) Compliments Old Cheddar Cheese, grated
  7. 60 mL (1/4 cup) Saint-Paulin cheese (rind removed), grated
  8. 1 slice of bacon
  9. 1/2 small onion

Directions

  1. In a saucepan, cook potatoes in boiling water until tender. Drain and set aside
  2. Heat butter in another saucepan over medium-high heat. Add flour and whisk continuously for 1 minute. Add cream and butter and while whisking, continue cooking for about 5 minutes or until sauce thickens. Remove from heat. Add cheese and incorporate well. Set aside.
  3. Cook bacon in a skillet over medium-high heat until partially cooked. Add onion and cook until bacon is done and the onion is translucent. Add potatoes and cook 1 or 2 minutes. Reduce heat to low and add cheese sauce. Mix well and reheat.
  4. Garnish with parsley and serve with chicken or veal and a green vegetable
