Curried Tilefish Steaks

Ingredients

  1. 4 tilefish steaks
  2. To taste, salt and pepper
  3. 30 mL (2 tbsp.) canola oil
  4. 1 white onion, chopped
  5. 500 mL (2 cups) sliced fresh mushrooms
  6. 250 mL (1 cup) plain yogurt
  7. 30 mL (2 tbsp.) curry powder
  8. 125 mL (½ cup) chicken bouillon

Directions

  1. Preheat oven to 190°C (375°F).
  2. Place tilefish steaks on a baking sheet. Season to taste and bake in the oven for 10 to 12 minutes, or until fish flakes easily with a fork.
  3. In the meantime, heat oil in a skillet and sauté onion and mushrooms for 3 to 4 minutes. Reserve.
  4. Heat yogurt and curry powder in a small saucepan over low heat. Add chicken bouillon and mushroom mixture.
  5. Season and let simmer for 3 to 4 minutes.
  6. Serve tilefish steaks with the sauce, snow peas and jasmine rice.
