Cod with herbs

Ingredients

  1. 60 mL (1/4 cup) olive oil
  2. 4 anchovy fillets (optional)
  3. 1 onion, thinly sliced
  4. 1 garlic clove, thinly sliced
  5. 250 mL (1 cup) frozen peas
  6. 1 (398 mL) can diced tomatoes
  7. 750 g (1 2/3 lb.) cod fillets, cubed
  8. 15 mL (1 tbsp.) chopped fresh tarragon leaves
  9. 15 mL (1 tbsp.) chopped fresh mint leaves
  10. 15 mL (1 tbsp.) chopped fresh parsley
  11. To taste, salt and ground pepper

Directions

  1. In a large skillet, heat oil and melt anchovies (if used).

  2. Add onion and garlic and sauté for 2 to 3 minutes.

  3. Add peas and tomatoes. Stir well and bring to a boil.

  4. Reduce heat and let simmer gently for 10 minutes, stirring occasionally.

  5. Add cod and continue cooking for 5 to 7 minutes.

  6. When finished cooking, garnish plate with chopped herbs and season with salt and pepper.

  7. Mix well and serve.

CHEF’S SECRET

If you aren’t using anchovies, simply add a pinch or two of salt to capture the savoury flavour of this recipe.
