Ingredients

700 g (1.5 lb) cod

100 ml (1/3 cup + 2 tbsp.) olive oil

100 ml (1/3 cup + 2 tbsp.) red onion, cubed

2 cloves garlic, finely minced

1 red pepper, cubed

1 habanero pepper, seeded and finely chopped

3 sprigs thyme

6 sprigs parsley, chopped

3 limes, juiced

Directions
- Shred the cod into small strips.
- Heat half the oil in a frying pan over low heat.
- Fry the onion, garlic, pepper, habanero pepper, and thyme for 1 minute while stirring with a spatula.
- Add the cod and cook for 8–10 minutes while stirring.
- Remove from heat and add the remaining oil, parsley, and lime juice.
- Let rest for 5 minutes before serving.
