Cod Burgers with Tartar-Style Sauce by TOUGO

Ingredients

Cod Patties

  1. 1 fillet, 600 g (1 ½ lb.) fresh cod
  2. 1 large egg
  3. 15 mL (1 tbsp.) Dijon mustard
  4. 1 lemon
  5. 1 small onion, finely chopped
  6. 2 celery stalks, diced
  7. 60 mL (¼ cup) freshly chopped parsley
  8. 125 mL (½ cup) frozen corn kernels
  9. A pinch salt
  10. A pinch pepper
  11. 250 mL (1 cup) canned chickpeas, rinsed and drained

Tartar-Style Sauce

  1. 60 mL (¼ cup) plain Greek yogurt
  2. 60 mL (¼ cup) light mayonnaise
  3. 1 green onion, chopped
  4. 3–4 sweet pickles, chopped
  5. 5 mL (1 tsp.) freshly chopped dill
  6. 10 mL (2 tsp.) chopped capers

Burgers

  1. 6 hamburger buns
  2. Your choice of condiments (lettuce, tomatoes, pickles, onions, etc.)

Directions

  1. Preheat oven to 190 °C (375 °F).
  2. Place cod fillet on a baking sheet lined with parchment paper or silicone baking sheet. Bake for about 17 minutes or until cooked through and cod flakes easily with a fork.
  3. Meanwhile, in a large bowl, mix remaining patty ingredients except chickpeas. Set aside.
  4. Once cod is cooked, place in a food processor with chickpeas and blend until smooth. Pour purée into the bowl with remaining patty ingredients and mix until smooth.
  5. Heat a little oil in large skillet set over medium heat. Divide mixture into 6 patties, about 1 cm (½ in.) thick, and spoon into skillet. Cook patties about 3–4 minutes on each side, until golden brown.
  6. Mix all sauce ingredients in a bowl.
  7. Place a cod patty on each burger bun, spread with sauce and add chosen condiments. Serve with a green salad.

Cod patties keep in the refrigerator for three days. Can be frozen.
