Filling

500 mL (2 cups) pitted dried dates, chopped

250 mL (1 cup) dates

45 mL (3 tbsp.) brown sugar

15 mL (1 tbsp.) lemon juice

2 mL (½ tsp.) baking soda
Crumble

500 mL (2 cups) rolled oats

250 mL (1 cup) flour
-
250 mL (1 cup) brown sugar

2 mL (½ tsp.) baking powder

1 mL (¼ tsp.) salt

250 mL (1 cup) unsalted butter at room temperature, cut into cubes

Directions
- Preheat the oven to 160°C (325°F).
- Place dates, water, brown sugar, and lemon juice in a saucepan and bring to a boil.
- Add baking soda and simmer over low heat about 5 minutes, stirring constantly.
- In a bowl, mix together the rolled oats, flour, brown sugar, baking powder, and salt.
- Add the butter and mix until dough is moist but crumbly.
- Press half the crumble mixture into the bottom of a 22 x 22 cm (9 x 9 in.) square baking dish.
- Add the filling and then top with remaining crumble mixture.
- Bake for 30 minutes or until crumble is golden brown.
