Ingredients
Meatballs

1 large handful of spinach leaves

1/4 cup coarsely chopped parsley

8 large basil leaves

4 fresh sage leaves

2 coarsely chopped garlic cloves

1/2 teaspoon fennel seeds

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

250 g (1/2 lb) ground turkey

200 g (just under 1/2 lb) ground pork

1 egg
-
1/2 cup breadcrumbs

1/2 cup grated parmesan, more for sprinkling on top
Mashed potatoes

6 potatoes, peeled and cut into four
-
1/2 cup hot milk
-
1/4 cup softened butter
-
1 cup grated parmesan
-
Salt and pepper to taste
Sauce
-
1 jar (660 ml) Stefano Faita marinara sauce
-
2 tablespoons olive oil

Directions
Mashed potatoes
- In a large saucepan of salted boiling water, cook the potatoes for 20 minutes or until tender. Drain and mash potatoes. Add milk and butter, mash until smooth.
- Add parmesan and mix well. Add salt and pepper to taste.
Meatballs
- Preheat oven to 200 °C (400 °F).
- Place spinach, parsley, basil, sage, garlic, fennel seeds, salt and black pepper into a food processor and pulse until very finely chopped. Set aside.
- Place ground turkey, ground pork and egg into a large mixing bowl and delicately work them together with your hands. Add chopped spinach mixture, breadcrumbs and parmesan. Work ingredients together with your hands until uniformly mixed, then shape into balls about the size of a golf ball and place them on a baking sheet lined with parchment paper.
- Mix 2 tablespoons of marinara sauce with 2 tablespoons of oil and drizzle a little on each meatball.
- Cook meatballs for 10-15 minutes.
Sauce
- Meanwhile, heat marinara sauce in a large saucepan over medium heat.
Assembly
- Transfer cooked meatballs into saucepan with marinara sauce and cook for 7 to 10 minutes. Serve over mashed potatoes on a Christmas plate and sprinkle with a little more parmesan.
