1. Preheat oven to 190°C (375°F ).
2. Lightly brown chorizo in a skillet and set aside.
3. In the same skillet, fry leek and onion for a few minutes and set aside.
4. Beat eggs and cheese in a bowl, then add remaining ingredients and combine.
5. Spray an 8 cup muffin pan with vegetable cooking spray. Line each cup with a tortilla, pressing gently into bottom.
6. Pour an equal amount of egg mixture into each cup.
7. Bake for 20 to 25 minutes or until eggs are cooked.
8. Serve for brunch or as a light meal with a salad.

Chef's secret
To vary the taste of quiches, use whole wheat or flavoured tortillas. Add or substitute certain ingredients with sundried tomatoes, grilled bell peppers, blue cheese, spinach, prosciutto, pancetta, toasted pine nuts, etc.

Goat cheeses are generally moister and lower in fat than equivalent cow's milk cheeses. Soft, unripened goat cheeses often contain less than 20% fat.
