Cajou Cuisine Chocolate Snowballs
Chocolate Snowballs

Total time: 45 minutes

Ingredients

  1. 125 mL 1/2 cup peanut butter
  2. 45 mL 3 tbsp. butter, softened
  3. 5 mL 1 tsp. pure vanilla extract (or artificial)
  4. 375 mL 1 1/2 cups Rice Krispies
  5. 250 mL 1 cup shredded coconut
  6. 1 milk chocolate chips

Directions

  1. Combine all ingredients (except chocolate).
  2. Once ingredients are thoroughly combined, place in fridge for 10 minutes.
  3. Remove mixture from fridge and shape into balls.
  4. Return balls to fridge for 10 minutes.
  5. Melt chocolate over low heat (in a bain-marie).
  6. Remove balls from fridge and dip them one by one in melted chocolate. Place balls on parchment paper.
  7. Sprinkle balls with a little shredded coconut to give them a snow-covered look.
  8. Freeze balls for 15 minutes before serving.

Chef’s secret

  • Rinse your fingers with cold water before shaping the balls as this will keep the mixture from sticking to your fingers!
