Ingredients

  1. 375 mL (1½ cups) all-purpose flour
  2. 250 mL (1 cup) oat flakes
  3. 10 mL (2 tsp.) baking powder
  4. 2 mL (½ tsp.) baking soda
  5. 250 ml (1 cup) grated raw squash
  6. 75 mL (1/3 cup) vegetable oil
  7. 125 ml (½ cup) milk
  8. 1 egg
  9. 125 mL (½ cup) maple syrup
  10. 175 mL (¾ cup) semi-sweet chocolate chips

Directions

  1. Place rack in middle of oven. Preheat oven to 180°C (350°F).
  2. Grease a loaf pan. 
  3. Combine all dry ingredients in a large bowl. Add grated squash.
  4. In another bowl, combine oil, milk, egg, and maple syrup using a whisk.
  5. Add to dry ingredients and mix gently with a spatula until barely moist.
  6. Add chocolate chips and combine. 
  7. Place dough in loaf pan. Bake for about 50 minutes or until a toothpick inserted into centre comes out clean. Set aside to cool. Remove from pan and cool on wire rack.
