60 mL (¼ cup) water

1 (7 g) packet of gelatine

115 g (4 oz.) semi-sweet chocolate, coarsely chopped

5 mL (1 tsp.) sugar

2 mL (½ tsp.) vanilla extract

400 g firm tofu, drained

175 mL (¾ cup) 35% whipping cream

500 mL (2 cups) sliced fresh strawberries

1 23-cm (9 in.) pie shell, baked

Directions
- Pour the water into a small saucepan. Sprinkle on gelatine and let sit 1 minute.
- Dissolve gelatine over low heat. Add the chocolate, sugar, and vanilla and continue heating, stirring constantly, until chocolate has melted.
- Remove from heat and set aside.
- Purée the tofu in a food processor. With food processor still running, slowly add the chocolate mixture until smooth and creamy.
- Transfer to a large mixing bowl.
- In an other large bowl, beat cream until stiff peaks form. Gently fold whipped cream into chocolate-tofu mixture.
- Line bottom of the pie shell with strawberry slices and then top with tofu mixture.
- Refrigerate about 2 hours.
- Decorate with strawberry slices and shaved chocolate before serving.
