Chicken burgers with peanut topper

Ingredients

Peanut sauce

  1. 45 mL (3 tbsp.) crunchy peanut butter
  2. 20 mL (4 tsp.) ketchup
  3. 10 mL (2 tsp.) rice vinegar
  4. 5 to 10 mL (1 or 2 tsp.) hot sauce (Sriracha or other)

Burgers

  1. 1 lime, sliced
  2. 4 boneless chicken breasts
  3. To taste, salt and ground pepper
  4. 4 flatbreads
  5. 2 lettuce leaves of your choice, torn into pieces
  6. 1/2 carrot, grated or julienned
  7. 1/2 red bell pepper, julienned
  8. To taste, green onions, chopped
  9. To taste, fresh cilantro, roughly chopped

Directions

Sauce

  1. Whisk all ingredients together in a small bowl. Set aside.

Burgers

  1. Squeeze 1 lime slice or more over each chicken breast. Add salt and pepper to taste. Refrigerate 15 to 20 minutes.
  2. Meanwhile, oil barbecue grill and preheat to medium-high.
  3. Grill chicken breasts on the barbecue for around 20 minutes, turning halfway through cooking and adding lime slices as needed until internal temperature reaches 77°C (170°F).
  4. A minute or two before chicken breasts are cooked, grill flatbreads, keeping a close eye on them so they don’t burn.
  5. Coat each piece of bread with around 15 mL (1 tbsp.) of peanut sauce, then top each with a grilled chicken breast.
  6. Garnish with lettuce, carrots, bell peppers, green onions, and cilantro, and serve immediately with a colourful salad.

Chef’s secret

Make the sauce in advance—it will keep for three days in an airtight container.
