Ingredients

4 boneless chicken breasts

60 mL (1/4 cup) lemon juice

2 garlic cloves, finely chopped

5 mL (1 teaspoon) dried thyme

2 mL (1/2 teaspoon) dred basil

1 bay leaf

45 mL (3 tablespoons) Our Compliments® Authentico olive oil

1 onion
-
500 mL (2 cups) mushrooms
-
1 can (540 mL/19 oz.) tomatoes
-
1 can (398 mL/14 oz.) pitted black olives, drained and halved
-
250 ml (1 cup) halved green beans

To taste, salt and pepper

Directions
- Marinate chicken breasts in the lemon juice, garlic, thyme, basil and bay leaf for 30 minutes in the fridge.
- Remove chicken, reserving marinade. In a large skillet, heat oil over medium-high heat.
- Add chicken breasts and cook for 5 to 6 minutes or until golden. Remove chicken and reserve. Add onion and mushrooms to skillet and cook for 2 to 3 minutes.
- Add reserved marinade and tomatoes and stir, scraping bottom of skillet. Return chicken breasts to skillet and add olives. Season mixture to taste and allow to simmer for 40 minutes.
- Add green beans and continue cooking for another 10 minutes or until beans are tender but still slightly crisp. Serve with Les Trois Moulins Traditional Baguette.
