Chicken- and cheeses-tuffed baguette

Ingredients

  1. 2 chicken breasts, cooked and chopped, about 500 mL (2 cups)
  2. 60 mL (1/4 cup) diced celery
  3. 125 mL (1/2 cup) grated Compliments Balance Reduced Fat Mild Cheddar Cheese
  4. 500 mL (2 cups) finely chopped Compliments Baby Spinach
  5. 1 container (245 g) Boursin® Cuisine shallot & chive
  6. 1 Compliments Balance Whole Grain Baguette

Directions

  1. In a bowl, mix together the chicken, celery, cheese, spinach, and Boursin® Cuisine. Set aside.
  2. Cut baguette in half lengthwise. Partially hollow out baguette, stuff with the chicken mixture, and place two halves back together. Wrap in plastic wrap and place in the refrigerator for 2 hours.
  3. Cut baguette into slices. Serve about 3 slices per person with soup or salad for lunch or a light supper.

Waste reducing tip : Transform the bread you removed from the baguette into croutons for salad. Coarsely chop and place on a baking sheet. Drizzle with a bit of olive oil and dry in a 120 °C (250 °F) oven. Season with salt and pepper after removing from oven.
