Cheese and smoked salmon crostini

Ingredients

Spread

  1. 180 mL (¾ cup) Cream cheese, at room temperature
  2. 45 mL (3 tbsp.) Grated Parmesan cheese
  3. 30 mL (2 tbsp.) Fresh basil, chopped
  4. To taste Salt and pepper

Crostini

  1. 5-6 slices Crusty bread
  2. 6-8 slices Smoked salmon
  3. 1 ball Burrata cheese
  4. To taste Chopped pistachios
  5. To taste Olive oil
  6. To taste Fresh herbs

Directions

  1. Mix all spread ingredients in a bowl. Season to taste. Set aside.
  2. Preheat oven to broil. Place slices of bread on a baking sheet. Broil for 2 to 3 minutes or until golden brown. Remove from oven and turn over bread slices. Broil for 1 to 2 minutes. Remove from oven.
  3. Top each slice of toasted bread with spread. Broil for another 2 to 3 minutes or until lightly browned. Remove from oven.
  4. Place slices of toasted cheesy bread on a serving plate.
  5. Add a slice of smoked salmon to the top of each crostini. Garnish with creamy burrata and chopped pistachios. Add a drizzle of olive oil and fresh herbs to taste.
  6. Serve and enjoy.
