Cheese and Onion Spread
- In a skillet over medium heat, cook the onion in the butter until tender and golden. Season with salt and pepper. Transfer into a bowl and let cool for 15 minutes.
- In a small food processor, purée the cream cheese, cheddar cheese and chives until smooth. Using a spatula, scrape down the sides of the food processor as needed. Add the mustard and onion. Blend to combine. Adjust the seasoning. Transfer into an airtight container. The spread will keep for 1 week in the refrigerator.
Sandwich
- Cover the bread generously with the cheese and onion spread. Top with the roast beef and lettuce. Close the sandwich.
