- In a large bowl, cover the beans with water. Let stand for 8 hours or overnight.
Drain and rinse the beans, then place them in the slow cooker. Add the rest of the ingredients, except for the sausages, and mix well. Season generously with salt and pepper, then place the sausages on top.
- Cover and cook on high for 8 to 10 hours or until the beans are cooked. Stir once halfway through cooking.
- Remove the sausages from the slow cooker and cut them into pieces. Return the sausages to the slow cooker and mix gently. Adjust the seasoning and serve.
*Preparation for oven cooking
- Place the rack in the center of the oven. Preheat the oven to 150 °C (300 °F).
- Place all the ingredients in a casserole dish, except for the sausages, and mix well. Season generously with salt and pepper, then place the sausages on top.
- Cover and cook for 4 to 5 hours. Add broth if necessary. Stir once halfway through cooking.
- Remove the sausages from the casserole and cut them into pieces. Return the sausages to the casserole and mix gently. Adjust the seasoning and serve.
