Directions

  1. Wash and dry carrot tops thoroughly, then coarsely chop.
  2. Peel garlic.
  3. Blend carrot tops, garlic, Parmesan, nuts, and lime juice and zest in a food processor, slowly adding oil until smooth.
  4. Season with salt and pepper.
  5. Serve with your favourite pasta or on a sandwich. Keeps for up to 4 days in the refrigerator in an airtight container.
