Ingredients

15 mL (1 tbsp.) caraway seeds
6 carrots, grated
30 mL (2 tbsp.) cider vinegar
15 mL (1 tbsp.) olive oil
5 mL (1 tsp.) honey
2 mL (½ tsp.) salt

Directions

Toast caraway seeds in a dry skillet over medium heat, stirring frequently, just until fragrant, about 2 minutes.
Mix together carrots, toasted caraway seeds and remaining ingredients in a bowl.

Tip

Aromatic caraway seeds lend a sweet, nutty flavour to vegetables.
