Capriny Cheese and Honey on English Muffins

Capriny Cheese and Honey on English Muffins

Ingredients

45 mL (3 tablespoons) hazelnuts, coarsely chopped
4 whole-wheat English muffins, toasted
1 mango, sliced
15 mL (1 tablespoon) butter
1 mL (1/4 teaspoon) cinnamon
30 mL (2 tablespoons) honey
1 package (100 g) plain Capriny cheese

Directions

Using a fork, combine the cheese, cinnamon and 15 mL honey in a small bowl. Set aside.
Heat the butter and remaining honey in a frying pan on high heat. Add the mango slices and sauté for 1 minute on each side.
Spread the cheese mixture and mango slices on the muffin halves. Sprinkle with hazelnuts.
Serve for brunch with scrambled eggs and orange juice.
