Ingredients

  1. 2 packages (227 g each) crab-flavoured Alaskan pollock flakes (227 g package)
  2. 30 mL (2 tbsp.) pesto
  3. 15 mL (1 tbsp.) fresh lemon juice, divided
  4. 1 fully ripe avocado, halved, pitted and peeled
  5. 2 vine-ripened tomatoes, thinly sliced
  6. 1 English cucumber, thinly sliced
  7. 45 mL (3 tbsp.) Dressing of your choice

Directions

  1. Break apart pollock flakes and chop coarsely.
  2. In a bowl, mix together pollock, pesto, and 10 ml (2 tsp.) lemon juice. 
  3. Cut each avocado half into slices. 
  4. Arrange avocado on a platter and brush with remaining lemon juice. 
  5. Arrange tomato and cucumber slices on the platter. 
  6. Place pollock salad in centre of platter and drizzle all ingredients with dressing.
