Ingredients

2 sheets of nori

500 ml (2 cups) sushi rice, cooked

4 crab-flavoured Alaskan pollock sticks

80 g (3 oz) cream cheese, cut into sticks (1/3 brick)

½ English cucumber, seeded and julienned

½ avocado, thinly sliced

15 ml (1 tbsp) masago

3 to 4 slices of smoked salmon or tartare-grade fresh salmon

To taste, Japanese mayonnaise

Directions
- Lay a sheet of nori on a sushi mat. Spread 1 cup of the sushi rice on the sheet of nori and spread it with your fingers, leaving a 2 cm (1/2 in) strip without rice at the top of the sheet.
- Place half of the pollock sticks, cream cheese, cucumber juliennes, avocado strips and masago in the center of the sheet.
- Roll firmly using the sushi mat to form a tight roll.
- Place 1 to 2 slices of smoked salmon or fresh salmon on the roll.
- Carefully cut into 8 pieces using a sharp knife.
- Repeat the same steps for the second roll.
- Serve with Japanese mayonnaise.
