Garlic confit, Parmesan and herbs
- Preheat oven to 180 °C (350 °F).
- Brush garlic bulb halves with a little oil. Wrap in foil. Bake for 30–40 minutes (or until browned). Remove from oven and let cool.
- Using the back of a spoon, spread a little softened butter on a wooden serving board in the shape of a petal. Repeat with remaining butter to create a flower.
- Place pieces of garlic on butter. Garnish with grated Parmesan, shaved Parmesan and fresh basil.
- Serve with croutons.
