Brand-New Stew with Cabbage and Star Anise

Ingredients

45 mL (3 tbsp.) olive oil
1.4 kg (3 lb.) cross rib or bottom blade roast
1 minced onion
2 garlic cloves
4 carrots cut into big sections
1 pinch crushed red pepper flakes
500 mL (2 cups) beef broth
80 mL (1/3 cup) tamari sauce
80 mL (1/3 cup) maple syrup
3 star anise flowers
½ small green cabbage, cut into big pieces
1 bulb fennel, cut into big pieces

Directions

Preheat oven to 150°C (300°F) .
Heat 30 mL (2 tbsp.) oil in a large casserole. Sear meat on both sides to brown. Set aside.
In the same casserole, add rest of oil and brown onion, garlic and carrot sections for about 3 to 5 minutes. Add crushed pepper flakes and continue cooking 1 minute.
Add meat, broth, tamari, maple syrup and star anise flower. Bring to boil.
Roast in oven around 4 hours. Midway through cooking, add cabbage and fennel pieces.
