- Preheat oven to 180oC (350oF).
- Place ham in an ovenproof pan. In a bowl, combine onion, grape juice, brown sugar and lemon peel. Pour over ham. Cover and bake for 1 hour and 30 minutes, or until meat is tender, basting frequently during cooking.
- Mix brown sugar, chicken broth, grape juice, lemon juice and Dijon mustard in a saucepan. Cook over medium-high heat until hot.
- Stir in cornstarch and heat until sauce thickens. Allow to simmer for 2 minutes. Add green grapes and transfer to a sauce boat. Serve ham with sauce.
VARIATION: Replace grape juice by apple juice, brown sugar by maple syrup and the grapes by apple chunks.
