- Grill blue marlin steaks directly on oiled barbecue rack over medium-high heat for 4 to 5 minutes per centimetre (8 to 10 minutes per inch thickness).
- Bring milk and Boursin cheese to a boil in a saucepan. Reduce heat to medium and whisk until sauce is smooth.
- Spoon sauce onto blue marlin steaks.
- Serve with basmati rice and broccoli florets.
