Ingredients

30 mL (2 tbsp.) olive oil

1 onion, thinly sliced

2 stalks celery, diced

2 carrots, peeled and diced

2 cloves garlic, chopped

1 sweet yellow pepper, diced

80 mL (⅓ cup) Compliments Pot Barley

5 mL (1 tsp.) chilli powder

To taste, salt and pepper

1 can (900 mL) Compliments Vegetable Broth

1 can (796 mL) Compliments Diced Tomatoes

1 can (540 mL) Compliments Balance No Salt Added White Kidney Beans, drained and rinsed

To taste, chopped fresh parsley (optional)

To taste, grated Parmesan (optional)

Directions
- Heat oil in a large saucepan and fry the onion, celery, carrots, garlic, yellow pepper, barley, and chilli powder. Season with salt and pepper.
- Add the broth and tomatoes and bring to a boil. Cover and simmer over medium heat for about 30 minutes.
- Stir in the beans and return to a boil. Cover and continue cooking until the barley is tender, about 10 minutes.
- When ready to serve, top with fresh parsley and grated Parmesan.
