Barbecued lobster with spicy mango sauce

Barbecued lobster with spicy mango sauce

Ingredients

Lobster

4 lobsters (about 550 g/ 1 1/4 lb. ea.)
60 mL (1/4 cup) olive oil
15 mL (1 tbsp.) choped parsley
To taste, sea salt

Spicy mango sauce

1 mango, peeled and diced
1-2 chili peppers, seeded
5 mL (1 tsp.) salt
15 mL (1 tbsp.) lime juice (about 1 lime)
10 mL (2 tsp.) sugar
15 mL (1 tbsp.) fresh, chopped cilantro

Directions

Blanch lobsters for 5 minutes in boiling salted water.
Preheat barbecue to medium-high.
Cut each lobster in half lengthwise and brush with olive oil and parsley.
Lightly salt and place on the grill. Cook 3 minutes per side or until the meat has nice color.
Serve lobster with spicy mango sauce.

Spicy mango sauce

Blend mango and all other ingredients together in a food processor, except for the cilantro. When sauce is smooth and creamy, add cilantro.

Variation

Cilantro may be replaced with flat-leaf parsley.
