Ingredients

375 ml (1 1/2 cups) whole wheat flour

5 ml (1 tsp) baking powder

1.25 ml (1/4 tsp) salt

80 ml (1/3 cup) unsalted butter, softened

160 ml (2/3 cup) sugar

2 eggs

5 ml (1 tsp) vanilla extract

160 ml (2/3 cup) siggi’s 2% banana skyr (Icelandic yogurt)

375 ml (1 1/2 cups) very ripe bananas, mashed (about 3 bananas)

100 g (3 1/2 oz) 70% dark chocolate, chopped into small pieces

180 ml (3/4 cup) walnuts, chopped

Directions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the flour with the baking powder and salt.
- In another bowl, whisk the butter with the sugar until the mixture lightens. Add the eggs and vanilla, then whisk again.
- Incorporate the dry ingredients into the wet ingredients, alternating with the yogurt, and stir with a wooden spoon until the mixture is smooth.
- Add the bananas along with two-thirds of the chocolate chunks and walnuts. Stir to combine.
- Grease a loaf pan and line it with parchment paper. Transfer the mixture to the pan and level the surface. Sprinkle the remaining chocolate chunks and walnuts on top.
- Bake for 1 hour to 1 hour 15 minutes, until a toothpick inserted into the center of the bread comes out clean.
- Remove from the oven and let cool on a wire rack.
