- Place oven rack in middle position and preheat oven to broil.
- Fry bacon in a non-stick skillet over medium-high heat for 3 to 5 minutes. Add chopped leeks and continue cooking for 1 minute. Remove from heat and let cool for 5 minutes.
- Add cheeses, parsley, and pepper. Mix well to combine.
- Arrange bread slices on a parchment-lined baking sheet. Divide bacon mixture evenly onto bread slices.
- Broil for 5 to 7 minutes or until golden.
- Serve as a cocktail, a side for brunch or breakfast, or with a delicious soup.
