1. 24 oysters, brushed and cleaned
2. 60 mL (¼ cup) coconut milk
3. 5 mL (1 tsp.) each of chopped fresh ginger, curry powder, and lemon juice
4. 4 basil leaves, chopped
5. To taste, Tabasco sauce

Apple and roasted pepper

1. 24 oysters, brushed and cleaned
2. ½ red apple, peeled and finely diced
3. 60 mL (¼ cup) roasted red pepper strips packed in water, drained and chopped
4. 10 mL (2 tsp.) finely chopped shallots
5. 10 mL (2 tsp.) each of lemon zest and juice
6. 10 mL (2 tsp.) each of rice vinegar, sesame oil, and honey
