Ingredients

80 mL (⅓ cup) each of canola oil and packed brown sugar

2 eggs

5 ml (1 tsp.) vanilla extract

250 mL (1 cup) applesauce

250 mL (1 cup) all purpose flour

250 mL (1 cup) whole wheat flour

80 mL (⅓ cup) wheat bran

5 mL (1 tsp.) baking powder

2 mL (½ tsp.) baking soda

1 mL (¼ tsp.) salt

12 paper muffin tin liners

Directions
- Preheat oven to 180°C (350°F).
- In a bowl, mix together the oil, brown sugar, eggs, and vanilla using an electric mixer. Beat until smooth.
- Mix in the applesauce. Set aside.
- In another bowl, combine the flours, wheat bran, baking powder, baking soda, and salt with a wooden spoon.
- Add dry mixture to the wet mixture a little at a time.
- Divide batter into a 12-muffin tray lined with muffin papers.
- Bake in oven 15 to 20 minutes or until a toothpick inserted into the centre comes out clean.
