Ingredients

450 g (1 lb.) tartare-grade ahi tuna, diced

1 unpeeled green apple, diced

5 mL (1 tsp.) lime zest (about 1 lime)

15 mL (1 tbsp.) lime juice (about 1 lime)

125 mL (½ cup) homemade or commercial mayonnaise

4 mL (¾ tsp.) Sriracha sauce, or to taste

30 mL (2 tbsp.) fresh chives, snipped

To taste, freshly ground pepper

Directions
- Combine the tuna, apple, lime zest and juice together in a bowl. Set aside.
- Mix together the mayonnaise, Sriracha sauce, chives, and pepper in another bowl.
- Add mayonnaise to the tuna mixture and blend well.
- For a nice presentation, press the tartare into a round cookie cutter or a clean tin can opened at both ends. Accompany with radish microgreens and garnish with a thin slice of green apple and a few chives.
